Here’s a ranking of the world’s 50 best restaurants for 2021

An annual list of the world’s 50 best restaurants is back – and for the first time, one city dominated the two best restaurants.

Two restaurants in Copenhagen, Denmark – Noma and Geranium – were ranked #1 and #2 respectively at the “The World’s 50 Best Restaurants” awards ceremony held Tuesday in Antwerp, Belgium.

This is the fifth time Noma has topped the list since 2010.

Since the list’s inception in 2002, European – and sometimes American – restaurants have spawned the best restaurant in the world. This year keeps that streak intact.

The annual ranking, which is organized by Britain’s William Reed Media, was not published last year due to the pandemic.

Noma — the world’s ‘best restaurant’ — again

Aided by chef Rene Redzepi, Noma is known for its “new Scandinavian cuisine” which relies on bred and fermented foods.

Redzepi produces three menus each year — there’s ocean season, vegetable season, and game and forest season — the latter currently served for 2,800 Danish kroner ($436) per person. Wine pairing costs an additional $280, and each menu contains approximately 20 courses.

The menus change within each “season” and no two experiences in the restaurant are the same.

“In 2010, when we were standing at this stage and shouting out the speaker’s words that Noma was number 1, it was a real shock to my system – to everyone’s system – and certainly a shock to our reservation system… website crashed multiple times said Redzepi at the awards ceremony yesterday. “Suddenly everyone was asking, ‘What’s going on in Denmark?'”

After the same restaurants dominated the top spots for more than a decade, the organization 50 Best announced in 2019 that the No. 1 winners could not be voted on next years’ lists. Noma closed in 2016 and reopened in 2018 in a new location, making it eligible to compete again.

Past No. 1 winners have been called “The Best of the Best”. Noma will soon join the seven restaurants on that list, including El Bulli in Spain, The Fat Duck in the United Kingdom and The French Laundry in the United States, as well as “Noma (original location)” as it is written on the list.

Europe dominated this year’s list, with more than half of the restaurants ranked there. Asia took up eight slots, with Odette (No. 8) from Singapore taking the top spot on the continent.

Eight restaurants in North America made the cut, with Mexico’s Pujol named the “Best Restaurant in North America.” South America took six slots, with two – Central and Maido, both in Peru – named to the prestigious top 10 list.

Africa came on the list, with Wolfgat from South Africa taking 50th place.

Spain left the awards with six restaurants etched on the list – the most of any country. More than half are located in the Basque Country, an autonomous region and renowned culinary powerhouse near the French border.

How the list is made

This is how voting works according to the 50 Best website.

Branches are chosen by some 1040 industry insiders known as “the academy.” They are food writers, critics, chefs and restaurateurs from 26 geographic regions around the world. Every year, at least 25% of the academy members in each region change.

Each member chooses 10 restaurants. There are no set requirements and restaurants are chosen at the discretion of members, said William Drew, director of content for The World’s 50 Best Restaurants.

“For some, the food could be everything, for others, the wine list or the atmosphere could be more important,” he told CNBC. “There are no set criteria — we don’t believe there is or should be one type of restaurant that makes the 50 Best lists.”

Academy members must vote for at least four restaurants outside their region. To accommodate the limited travel and dining options due to the global pandemic, the 2021 list consisted of votes cast in January 2020 — which were never published — and updated regional picks, Drew said.

Despite its name, the 50 Best organization released its list of restaurants ranked from 51 to 100 last month. The organization released its first comprehensive list — for Asia’s 50 Best Bars list — in June to include a wider range of deserving restaurants. establishments, Mark Sansom, the list’s content editor, told CNBC.

The academy also announced individual awards this week.

Peruvian chef Pia Leon won the World’s Best Female Chef award for her work at Lima’s Central restaurant – number 4 – and for her first solo venture, the nature-inspired restaurant Kjolle, also in Lima, Peru.

Italy’s Lido 84 – which debuted at number 15 – received the Highest New Entry award, which is awarded to the restaurant that ranks highest of all newcomers on the list.

The 50 Best organization publishes several top 50 lists to highlight excellence in the food industry, including The World’s Best Bars and regional lists such as The 50 Best Restaurants in Asia and The 50 Best Restaurants in Latin America.
