At the heart of this sprawling property is CordeValle’s prized 7,360-yard award-winning golf course designed by internationally acclaimed golf architect Robert Trent Jones Jr., who defines it as his finest creation. Bistro Clos features items like crab melted with avocado and melted mozzarella on sourdough and New York steak sandwiches with beer-stirred onion rings, in addition to gliders and quesadillas. Plan a trip to learn more about its production and hospitality facilities from one of Clos La Chances’s valued sommelier, which includes insight into the entire winemaking process. The vineyard is open to the public and displays specimens that reflect the diversity of varieties that have popularized the north central coastal region, Rutigliano explains.

The key to the hospitality program at CordeValle is the newly appointed head chef Goran Basarov, who uses a similar personal approach to his cooking and menu as the resort does in his guest relationships. Chef Goran oversees the menus at One Iron Bar, Lion’s Peak Grill and Il Vigneto.
“Chef Goran has over 10 years of global hospitality experience and incorporates international flavors into his cooking in a new and unique way,” says Rutigliano. “Previously, he served as head chef at PlumpJack Group and is adept at using locally sourced ingredients to produce fresh bold flavors from around the world.”
The most distinctive dish is the pizza from their wood pizza oven and the homemade pasta, according to the CEO. “Many of our guests pair their dishes with a wine from our extensive wine list or opt for our signature drink, CordeValle Heat Margarita.”
Finally, new to the resort are monthly wine series dinners, where guests are pampered for nineteen with curated four-course dinners paired with the perfect wines.
